Bouillon : Michelin's recommendations
The name is a reminder of the First Crusade (11C) hero, Godefroy de Bouillon, who sold his duchy to the Prince-Bishop of Liège before leaving for Jerusalem. Bouillon is small but is the main town in the Semois valley, near the French border. Its old slate roofs huddle together on the riverside, overlooked by the severe mass of its rocky-ridge fortress (by Vauban). It is very lively at weekends and in the summer.
