The principal property of these cellars is their constant temperature (between 9° and 12°), ideal for ageing the wine: this is where the delicate «remuage» operation is carried out, with the bottles being turned by hand for special vintages. Visitors can tour the Castellane, Mercier and Moët et Chandon cellars in Epernay.
