Perched on a plateau, Salers is one of the most attractive towns in the Upper Auvergne. A former royal bailiwick, it has preserved vestiges of its military and judicial past in the form of ramparts and Renaissance mansions grouped on a spur affording superb views of the confluence of the Aspre and Maronne. Local delicacies here include “truffade” (a potato cake with cheese), the delicious “pounti aux pruneaux” (a prune terrine), and the famous “carrés de Salers”, a shortbread biscuit.
