The monks’ cellar, which was divided into two storerooms, one for grains, the other for wine barrels awaiting transportation by boat (gabarre), now hosts the meetings of the Consulat de la Vinée de Bergerac wine council. Built between the 12C and 17C, the cloisters are made of brick and stone. There’s a lovely Renaissance gallery in the courtyard, a ceremonial room overlooking the slopes of Monbazillac and an oenology laboratory where all wines are tasted before being granted AOC status.
