Aubrac
: Michelin's recommendations
Abandoned hamlets, isolated villages and a landscape that gives visitors the impression of being at the end of the world… 1 300m up on a vast basalt plateau of the same name, Aubrac is a fresh and sunny little summer resort. Only a square tower, Romanesque church and 16C building remain of its ancient Dômerie, once home to an order of monastic knights who provided shelter to Compostela pilgrims.

The cuisine is simple, homely and prepared exclusively with locally sourced products. Aubrac beef and aligot are the two main house specialities, alongside calf's head with gribiche sauce. Traditional and hearty!
