Hautpoul : Michelin's recommendations
Perched on a rocky spur with the ruins of the castle and church, overlooking the River Arnette and the Thoré Valley, this village was the original site of Mazamet. Beseiged by Simon de Montfort in 1212, the inhabitants deserted the village and took up residence down below, beside the river, to work with wool.
