Sorèze
: Michelin's recommendations
This village bordering the Montagne Noire sprang up in the 8C around a Benedictine abbey whose fate it shared, with alternating periods of expansion, destruction and reconstruction. In 1573, during the Wars of Religion, the abbey was pillaged and burned, and the village ruined; the parish church of Saint-Martin, proof of its prosperity in the 14C, was destroyed. The only remains are the bell-tower-choir that is still visible near the abbey-school, run by Dominicans until 1974, now a hotel.
