Escargots au four sur compoté de lâpereau aux topinambours sauce au vert : Empilement et mélange des ingrédients, les escargots étaient trop cuits, le lapereau en bouillie. Escalope de Cabillaud rôtie, Mousseline de céleri et champignons rosés beurre citronné Le poisson était desseché, l'assiette bouillante..., Et Les fraises étaient noyées dans le jus.
