Cavaillon has only retained a few memories of its past, but the most moving recollection is without doubt provided by the synagogue which evokes the plight of the large Jewish community of Comtat. Cavaillon, dominated by Saint-Jacques hill on which the oppidum of Cabello once stood and which was the origin of this town, is today France's biggest fruit and vegetable market. It is also the home of the town's famous melon which is eaten at every opportunity.
