Midway between Arles and Aix, in the heart of the countryside, clad with olive trees since the 15C, the town is famous for its oil-mills and soap (known as Marseille soap!) which ensured its prosperity in the 19C. Salon is where Nostradamus decided to withdraw to write his predictions. When you are sitting at a peaceful café terrace, look up: the Patrouille de France (France's Red Devils) are now based in Salon and you may see them practising.
