Situated between the Harz mountains and the Weser, this former Hanseatic town counts no less than 700 breweries whose mission in the Middle Ages was to supply the whole of Germany with "Einpöckisches Bier", now known as Bockbier. Einbeck's medieval fortifications are still visible, but even more impressive are several hundred half-timbered 16C houses richly decorated with multicoloured carvings.
