The Moselle Valley, with its broad curves, flows between two massifs of Rhineland schist: the Eifel, to the northwest, and the Hunsrück to the southeast. The slopes are covered with vineyards producing dry white wines, largely from Riesling stock. The schistous soil plays an important role in the maturing of the grapes: it absorbs heat during the day and breathes it out again during the night. The harvest is late and is sometimes delayed until the feast of St Nicholas (6 December).
