Cooking in his own distinctive style, Leipzig-born Martin Schulz, a trained butcher and chef, combines traditional Japanese cuisine (following a valuable period in Osaka) with regional (and decidedly rustic) German elements. The set menus are probably the best way of trying a bit of everything.
