A bonifierie is a processing plant where coffee beans are separated from their pulp before drying. The Espérance plantation is an old 18C coffee estate; a rebuilt mill with its huge water wheel powers a “déceriseuse”, separating coffee beans from pulp with a rotating grinder. Visitors can see this amazing machine in action and get a picture of the processes involved before concluding with a tasting. Also on site is an adventure trail: Mangofil.
