Castelbuono is a charming town which grew up around its 14C castle. It was once the centre for the production of manna (ash tree sap), a sickly sweet sugar used as a sweetener and laxative which provided the area with its main source of income. Although only a tiny amount of manna is produced today, it can still be purchased from the tobacconist's at the top of Corso Umberto I.
