Once a working port on the Zuiderzee renowned for its shipyards, this large cheese centre is a small, peaceful and charming town. Edam is dominated by a tall bell tower: the Speeltoren , the remains of a church demolished in the 19C. The town is crossed by canals still lined with some 17C houses. Edam cheese resembles Gouda with its smooth cover but is differentiated by its yellow ball shape covered with a red wax finish.
