Tolosa
: Michelin's recommendations
Renowned as a bastion of Basque separatism, Tolosa is also an old industrial town devoted to the wood pulp industry. Its historic old town (Casco Viejo) is home to numerous mansions, palaces and churches, as well as a recently restored mill. Its colourful and bustling markets and squares (such as Berdura Plaza) are particularly enjoyable. Make sure you taste the haricot beans for which the town is famous.
