The interior embraces an elemental design combining glass, steel, rice paper, and woods—ranging from Canadian white pine and oak counters to rustic reclaimed planks. Even the professional and gracious servers' uniforms seem to complement the space. The result of such painstaking detail is a sense of harmony and beauty throughout Brushstroke. The kaiseki menu may begin with a custard-like dome of tofu atop wedges of dashi-braised mountain yam, turnip, and pumpkin tucked with sweet Scottish langoustine. Essence of yuzu appears in many guises, notably in the yuzu-perfumed akamutsu (a rare deep-sea ruby snapper prized for its oily-tender white meat) over a luscious bed of toro tartare, studded with osetra caviar and crisp ribbons of burdock. Expect intensely flavorful meat courses like sliced pork belly, cooked with myriad techniques for velvety texture, with clear and enticingly sour apple sauce. Desserts are surprising and delicious—think rich, salty, nutty, caramel-like ice cream flavored with soy sauce topped with a bit of wasabi-induced heat and crunchy buckwheat groats.
