This is the new kid on the newly revitalized block. Still, Jin Ramen's location at the foot of the 125th subway exit and the owners' ties to Columbia University are not the reasons why they see a constant stream of hungry diners. Nor is their success thanks to the divinely simple space with a few tables and dining counter set beneath warm, wood-textured walls. They just happen to be serving the best ramen anywhere above 59th Street. Towering windows look upon Broadway, but bubbling stovetops may just be the view of choice here. Steaming bowls of shio ramen with bamboo shoots and a soy-flecked egg are churned out routinely by chefs who are all smiles when assembling tonkotsu, rich and salty with pork, or the exemplary nankotsu kara-age (fried chicken).
