Cuisine Seafood

More than $75

Quietly situated at the base of a midtown tower and obscured by shaded windows, Le Bernardin is anything but nondescript. Every aspect of its restful, earthy décor conveys something new: silvery rippled fabric walls to conjure the sea; plush carpeting with subtle rings reminiscent of sea creatures; and the triptych "Deep Water No. 1" as a dramatic focal point. No matter the time or day, there is sure to be a full house of expense account holders and dressy tourists. While Chef Eric Ripert's signature cooking may combine myriad global accents, this is classically rooted seafood cuisine at its very best. From the "Almost Raw" offerings, find neat rows of sweet scallops and creamy uni contrasted with a brunoise of pickled Granny Smith apple, bits of red chili, chive snips, and Meyer lemon vinaigrette. "Barely Touched" dishes include lobster lasagna composed of fresh pasta sheets, steamed lobster, a touch of roasted tomato, and a luxurious yet not overly rich black truffle-butter sauce. A clever and highly enjoyable reconfiguration of Chinese flavors is found in the "Lightly Cooked" black bass, amber-brown at the edge and moist within, finished tableside with a riff on hot and sour soup.

      Pros

Subtle seafood compositions, high quality products, decent wine list (excessively priced) but...

      Cons

...nothing superlative, indecent desert portions (although excellent), unforgivable mistakes (miserable bread quality), thoughtful staff but restless service striving to ensure high table turnover. By no means a 3 stars restaurant.
