From first glance, this is a spectacular home to fine dining. Everything is done to the highest standard, yet never appears showy. The room itself feels very posh and spacious, with intricate teak panels, brown leather armchairs, and a stunning seafaring triptych covering the back wall. Even the servers (dressed in full black and white livery) remain discreet, anticipatory, and personable. The clientele is an upscale mix of grown-ups celebrating special occasions or business deals. Chef Eric Ripert's menu promises to take the taste buds on a rousing tour of seafood-centric dishes that are sure to cover vast areas of the globe. This might begin with "flash marinated" hamachi with sea beans, daikon, black garlic ponzu, and a liberal sprinkle of pimente d'Esplette. Tuna may seem shockingly simple but sublime, thinly pounded like a ruby red carpet, draped over brioche toast with a touch of foie gras and drops of emerald green olive oil. The roasted cobia is opaque and buttery, in a well-spiced curry and light coconut-lime broth. Overall, the elements are subtle rather than basking in the complex power of East Asian ingredients. Desserts are surprising, fun, and a consistent highlight.

      Pros

      Good flavor of some foods. Superb deserts.

      Cons

      Behavior of waiters. Small portions. Artificial carpeting. Very little of real French restaurant atmosphere.

      Subtle seafood compositions, high quality products, decent wine list (excessively priced) but...

      Cons

      ...nothing superlative, indecent desert portions (although excellent), unforgivable mistakes (miserable bread quality), thoughtful staff but restless service striving to ensure high table turnover. By no means a 3 stars restaurant.
