With a longstanding reputation for old-world elegance, Picholine remains as swank as it is discreet, stationed just steps from Lincoln Center. Most of the area's fine dining scene seems contemporary in comparison to this rather grande-dame, but that's ok. This space, with its dusty rose silks, silver candleholders, and crystal aplenty, is as suitably formal as the theater-goers of a certain age who populate it. Service can be brusque, as if the notably adept kitchen has stolen all the finesse from the room. The menu may offer à la carte options, but dining here is designed to be a prix-fixe experience. Start with precisely made pasta that combine intense flavors, such as agnolotti filled with creamy ricotta, balanced by chopped morsels of soft artichoke, basil, and rich tomato. Brightly colored wild king salmon paired with dabs of black garlic paste, charred cucumber, and tender squid floats in a pool of squid-infused dashi. Desserts may veer from classic with a nonetheless delicious vacherin, served as an elemental presentation of beautifully ripe strawberries and coulis, balsamic vinegar ice cream, strawberry sorbet with crunchy little meringues, and crystal-clear rhubarb soup.

After a couple of excellent amuses bouches I had perfect tortellini with fava beans, great Maine diver scallops, and an exotic fruit soup as dessert. All dishes were highly delicious. I have eaten very recently in a couple of star-rated restaurants in NYC, but Picholine was definitely superior.

The wines are - although excellent - somehow on the more expensive side. There are no bargains.
