Chef/owner Edwin Bellanco illustrates his skilled hand in Vitae's carte that has offered a massive bronzed sea scallop dressed with caramelized cauliflower florets, toasted cashews, and sweet-spicy green coconut curry; as well as a pasta course starring a nest of toothsome chitarra, tossed with fresh chickpeas and moist chicken-ricotta meatballs.
