Subtle smokiness and tangy flavors headline the jaw-dropping selection, featuring the likes of a brilliantly textured mixed-bean jelly with pickled leafy greens, crisp cucumber, and vinegar sauce; or a purple-red Chinese radish and shrimp soup.
