Not ideal for large gatherings or groups-on-the-go (meals here may take hours), the café is patronized by those who have time on their hands—and delicious, fluffy soufflés on their mind. Start with the staple French onion soup, but with such a surfeit of savory soufflés on display, it seems only right to follow suit with a towering chanterelle mushroom rich with Gruyère; or lobster soufflé that is at once decadent and fresh.
