Dining at Saison is like going to an idyllically California-casual dinner party at someone's impossibly cool brick warehouse. The gorgeous interior is vast, yet divided almost equally between the kitchen, lounge, and dining areas, which lends an airy feel. The décor bears an authentic, unique aspect with wood beams, Nordic-style chairs, and chef's table. No menus are provided and the price is not set until the time of your seating. Convivial servers guide diners through meals, providing instructions like "this is to be eaten in one bite" or "please use your fingers." This is when the forks briefly disappear. It's also when the staff may turn from engaging to didactic. Under Chef Joshua Skenes, the kitchen presents each course like a gift that not only demonstrates outrageous skill but unmitigated ambition—often with extraordinary results. Meals begin with an utterly refreshing rhubarb soda with edible flowers; or Parmesan custard with favas, gold leaf, and hearth-grilled pea sauce with subtle smokiness. This may lead to perfectly cooked rock cod in coconut curry with plantain chips and Thai spices, or morels stuffed with pigeon farci. Desserts, like sesame soufflé, are memorable.
