Take a cue from Vietnamese locals and march into this popular San Jose joint for steaming bowls of fantastic pho. Soups and stews are the name of the game here, many of which are jazzed up with ingredients like shrimp cake, soft tendon, fat brisket, and tripe. Slurp down the bún bò hue —spicy beef soup with tender chunks of flank steak, pork knuckles, shrimp cake, and rice noodles in a fragrant lemongrass broth, presented with a pile of fresh bean sprouts, mint, cilantro, lemon wedges, and green chilies. Or sample the pho bò áp chao —piquant pan-fried beef dressed in a garlic-lemongrass chili sauce, tossed over rice noodles with peppers, onions, basil, cilantro, and mint.
